I thought I would share a simple recipe we came up with.
This was one of those "Oh whats for tea" made up with what was in the pantry and freezer n left overs in the fridge. We had left over roast pork , but it could also be made with Chicken, Beef or Lamb.
It is simple to make, but looks like you have been slaving all day, so could also be cooked up for a special dinner party.
Ok so here we go,This one serves 4. We had
A large bowl full of chunky chopped up left over Roast Pork
A jar of Stroganoff tonight ( I have also done it with a packet mix)
A good sprinkle of Garlic and herb salt ( or if you have it Fresh garlic chopped and some fresh herbs)
A teaspoon of chicken stock ( or any fresh stock you have on hand)
1 leek sliced( or onion)
2 cups of sliced Mushrooms 1 carrot diced
2 sheets of puff pastry.( cut into 4 each sheet)
Chop, slice n dice fresh ingredients
Fry Leek and pork a little, add mushrooms garlic and herbs fry a little more. Pour contents of stroganoff jar over all. Put chicken stock into jar and add 1/4 cup of water shake and add to fry pan. Add diced carrot and simmer for about 20 mins.
While that is simmering, grab your sheets of pastry and cut into 4, Brush with milk and egg (or just milk )
and pop on an oven try and into the oven .
Bake for about 15 mins or until puffed and golden brown.
While that is all simmering and puffing, get your side veg on, we had mashed potato and steamed broccoli.
Now this is the fun part. Putting it all together.
Pastry nice n golden brown and puffy.
Take 4 of the puffs and crush a little area in the middle
This is where we put some of the stroganoff mixture. I used a soup ladle full for each pie.
Take the other puffed slice and pop it on top.. There you have it.Easy Peasy Pork Pie.
You could add what ever you like as a filling. Maybe try with apples for a sweet.
